No real reason behind it aside from the fact that I was at a fish market today to relax. I know I know; who relaxes by going to the fish market? Well, I do. So I ended up buying some manilla clams, wild organic coho salmon (2 types), and mahi mahi. This is what I made:

Manhattan style Clam Chowder with Softshell Crab

I put the chowder in a small sourdough bread bowl.

Cajun Spiced Mahi Mahi with jambalaya and chili

Duo of Coho Salmon Chinese Sizzling Soy Style

The salmon on the left was $16/pound where as the one on the right was about $4/pound. But nonetheless, I salvaged these pictures.

These pictures were from one of the nights I came back home from work early and decided to have a little tapas cocktail before sleep. So this what I made for my tapas platter:

From left to right: Petite four cheese chicken cordon bleu, Trio of steamed pork, chicken, and tofu, Quesadilla with fresh avocado and pico de gallo, Shrimp chili, and Old fashion grilled cheese sandwich.

The drinks to accompany:

From bottom left to top left: Lime Margarita, Sparkling Peach Gin Martini, Hawaiian Martini, and Bloody Mary.

Here's what the pairing was supposed to be:
Lime Margarita - Quesadilla
Bloody Mary - Grilled Cheese Sandwich
Hawaiian Martini - Shrimp Chili and Trio of steamed pork, chicken, and tofu
Sparkling Peach Gin Martini - Petite chicken cordon bleu

Good Ol' Fashion BBQ

So today I wanted to BBQ some tri-tip, and that was all I was focused on. Everything else was just to accompany the beef. So here goes:

Tri-Tip Au Poivre

I crusted the tri-tip in kosher salt and fresh ground black pepper. Let it sit for 15 minutes then smoked it in mesquite, oregano, and thyme for about 2 hours. I then roasted it over the grill and there it is!

Rice Cooker Jambalaya

Who said that good food can't be made in a rice cooker. So here it is. Italian turkey sausage, bells, carrots, celery, onion, garlic, tomato, chipotle, paprika, salt, and pepper. All in the rice cooker with rice and water. 30 minutes and this is what I got:

BBQ Shrimp Scampi

Just a quick simple appetizer. Nothing fancy or anything. Skewered a bunch of shrimp, then grilled it while brushing on a garlic shrimp essence butter sauce over (aka scampi sauce) it. The end result was delicious.

And that my friends was my simple small dinner.

A Bit of Comfort with a Dash of Elegance

While in my comfort food phase, the following was the ending to a good long craving phase that I made a couple weeks back.

Chili:

Homemade turkey sausage chili in a bowl with chopped onion and colby jack cheese. I stewed it for a good couple hours. I created my own blend of chili powder for this and it did hit the spot with a nice cold beer.

New-age kentucky hot browns:

Traditionally, a hot brown is bread with turkey breast, cheese sauce, tomatoes, and bacon. I re-created it with toasted wheat bread, turkey breast sandwich meat, provolone swiss cheese sauce, tomatoes, and two crispy strips of bacon. Oh man, I took a good nap after this. Soooo good.

Anyway. Time passes to today. It was my dad's birthday, so I made him a 7 course dinner. I took pictures of 5 of the 7 courses. So here it is:

Course 1: Hunan fused salt and pepper jalapeno shrimp

Nice and crispy. Accompanied by a nice cold margarita. Spicy and salty with a nice sweet drink. Perfect start.

Course 2: Eggplant Chicken Cordon Bleu Skewer with Pico de Gallo Salsa

This is the platter form for 2 people. Here is the single serving plating:

I pretty much skewered a small piece of eggplant, coated in breadcrumbs, then fried till crispy. Afterwards, skewered yet wrapped with a piece of provolone and a thin piece of chicken thigh, which is then coated in breadcrumbs and fried off.

Course 3: Skirt Steak carne asada taco salad with Italian Guacamole dressing

Enough said.

Course 4: Lime Sorbet (not pictured)

Course 5: Pan Fried Tilapia with Sizzling Soy

The base of the plate is steamed bok choy. The garnish is spun daikon and carrot. It's a good combination of sweet and salty.

Course 6: Shrimp Meat Ball Noodle Soup

Noodle was for traditions. Noodles was to signify for a long life. Made shrimp meat ball from scratch, then steamed. Used the shells to make the base for the soup; I used soy sauce to flavor up the soup. I used spun daikon and carrot for the base of the soup.

Course 7: Oreo Mint Chocolate Chip malt (not pictured)

That is everything I got for now. Hope you enjoyed the pictures.
